Cucina Sana ma gustosa: Panzanella sia



Innanzi tutto tantissimi auguri a tutti.
Vi auguro di trascorrere un anno sereno e ricco di soddisfazioni.
Senza nessuna originalità, tornata dalle buonissime vacanze pugliesi, oggi ricomincio la dieta.
Sono troppo vecchia per diete da giornale, iperproteiche, solo minestrone, uva a volontà, zuppa in ogni momento... ne ho fatte di tutti i colori nei miei primi quarant'anni e da un po' di tempo, dopo essermi fatta venire gastriti ed orticarie, sono convinta che meglio cibo sano, quando hai fame, tanta verdura, tanta frutta,pesce, legumi, poca carne ed un po' di fantasia.
Sicuramente non sarò da 7 chili in 7 giorni, ma se fosse anche solo 1 chilo in un mese, ma poco mal di stomaco, poca orticaria e tanto buonumore, mi va benissimo!!!

Questa ricetta è stranota, ma a me piace tantissimo, e anche se è più adatta in estate, ogni tanto mi assale la voglia del suo sapore un po' asprigno, della consistenza dei pomodori... e così eccoci qui.
Inoltre io l'ho mangiata l la prima volta in viaggio di nozze, 13 anni or sono, in un'incantevole locanda nelle Marche, cucinata da un cuoco egiziano bravissimo, che sapeva sposare alla perfezione i sapori della sua terra con quelli della cucina italiana. Così è una ricetta a cui sono veramente affezionata. 
Si possono aggiungere mille ingredienti a piacere, dalle mandorle, ai capperi, un acciughina, tonno, sicuramente delle olive... fate voi.

Pane raffermo cui avrete tolto la mollica (badate, se il pane è buono la ricetta viene buona, se è insapore la ricetta.... quindi vedete voi)
pomodorini buonissimi (in Puglia in questi giorni ho visto le pendule gialle... credo che verrebbe deliziosa)
basilico
una cipolla rossa di tropea (io la trovo buonissima ma mettetela solo se vi piace)
un cetriolo (o come nel mio caso una "pagnottella" ovvero una via di mezzo tra cetriolo e melone, non dolce, verdina chiara, molto ma molto buona che  io trovo solo in Puglia)
olio
aceto
sale
aglio

Mettete il pane a bagno nell'acqua fino a renderlo morbido.
Nel frattempo tagliate i pomodorini, spezzate le foglie di basilico, tagliate a tocchetti il cetriolo e anche la cipolla.
Strizzate il pane dall'acqua e sbriciolatelo in una ciotola, amalgamate tutti gli ingredienti, profumate con un po' di aglio, se lo gradite (secondo me qui l'aglio rosso ci starebbe proprio, ma proprio, bene). Quindi condite con olio di oliva extravergine buono buono, una presa di sale e l'aceto.
Allora sull'aceto dipende da voi, di mele se non lo gradite molto, un po' ci deve essere, quindi con quello di mele, date la nota di aspro ma alleggerite molto il sapore. Bianco, se l'aceto vi piace ma temete che il suo gusto sovrasti il resto, oppure se i pomodori, vista la stagione, non sono saporitissimi e quindi ne perdereste completamente l'aroma. Rosso, se amate l'aceto senza se e senza ma. Io amo l'aceto ma avendola preparata per ospiti ho messo l'aceto bianco. Per le quantità dovete procedere con l'assaggio.
Infine, fondamentale, lasciate riposare a temperatura ambiente per almeno un paio di ore, il sapore si struttura, si amalgama. Dopo il riposo riassaggiate perchè gli equilibri potrebbero essere mutati.

In regime dietetico è un bellissimo piatto unico, se lo accompagnate con un insalata verde ed un frutto siete a posto. Un bacione e buon ritorno alla normalità!!
